Prawn dumpling and vegetable stir-fry

Ingredients

  • 1/2 x 750g pkt prawn hargow dumplings
  • 200g Erawan pad Thai rice Noodles
  • 1 tbs vegetable oil
  • 850g pkt Chinese stir-fry vegetables
  • 34g pkt Continental Seasoning Sensations Vietnamese Stir Fry with Lemongrass & Lime
  • 1/2 bunch coriander sprigs, half roughly chopped
  • 1 tsp chilli flakes

Method

  1. Step 1

    Cook dumplings following packet directions. 

  2. Step 2

    Meanwhile, cook noodles in a medium saucepan of boiling water following packet directions. Drain well.

  3. Step 3

    Heat oil in a wok or large frying pan over high heat. Stir-fry vegetables for 5 mins or until just heated through.

  4. Step 4

    Add lemongrass seasoning, ½ cup (125ml) water, noodles, dumplings and chopped coriander and stir-fry for 3 mins or until sauce thickens slightly.

  5. Step 5

    Divide stir-fry among bowls and sprinkle with remaining coriander and chilli to serve.
