Chicken noodle stir-fry

Ingredients

  • 2 tsp Coles Vegetable Oil
  • 500g Coles RSPCA Approved Chicken Breast Mince
  • 1/4 cup (60ml) Coles Asia Sweet Soy Sauce
  • 450g hokkien noodles
  • 400g pkt Coles Kitchen Family Stir Fry Mix
  • 2 spring onions, thinly sliced diagonally, white and dark green part separated
  • 1 lime, juiced

Method

  1. Step 1

    Heat half the oil in a large deep frying pan over medium-high heat. Add the chicken and break up using a wooden spoon. Cook for 3-4 mins or until golden brown. Add half the soy sauce and cook, stirring, for 2-3 mins until chicken starts to caramelise. Transfer to a plate.

  2. Step 2

    Meanwhile, place the noodles into a large heatproof bowl. Cover with boiling water and set aside for 5 mins to soften. Use a chopstick to loosen and separate noodles. Drain well.

  3. Step 3

    Heat remaining oil in pan. Add vegetables and white part of spring onions and stir-fry for 4 mins or until tender. Return chicken to pan and add noodles. Drizzle with remaining sweet soy sauce and lime juice and toss to combine. Sprinkle with green part of spring onion to serve.
