Ingredients

  • 6 bacon rashers, rind removed
  • 1/4 cup (60ml) maple syrup
  • 120g pkt Coles Australian 4 Leaf Salad
  • 2 Royal Gala apples, thinly sliced
  • 1 red onion, thinly sliced
  • 1/3 cup (40g) pecans, toasted
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp wholegrain mustard

Method

  1. Step 1

    Heat a grill on high. Place the bacon on a baking tray lined with foil. Brush the bacon with half the maple syrup. Cook under the grill for 3-4 mins each side or until golden and crisp. Set aside to cool slightly. Tear the bacon into bite-sized pieces.
  2. Step 2

    Combine the salad leaves, apple, onion, bacon and pecans in a large bowl. Combine the remaining maple syrup, oil, lemon juice and mustard in a bowl. Drizzle over the salad mixture and season to serve.
