  • 2 x 400g cans Coles Cannellini Beans, rinsed, drained
  • 2 garlic cloves, quartered
  • 2 tbs lemon juice
  • 2 tbs extra virgin olive oil
  • 2 tbs pine nuts, toasted
  • 2 medium carrots, cut into batons
  • 1 small red capsicum, seeded, sliced
  • 4 celery sticks, cut into batons
  • 6 radish, halved

Method

  1. Step 1

    Place cannellini beans, garlic, lemon juice, two-thirds of the oil and half the pine nuts in a food processor and process until smooth.

  2. Step 2

    Place bean mixture in a serving dish and sprinkle with remaining pine nuts. Drizzle with remaining oil and season with pepper.

Are cannellini beans the same as white beans?

Plus, their mild, buttery flavour pairs well with various seasonings, so there’s plenty of scope for putting your personal touch on this white bean recipe.

Try adding fresh basil, parsley, rosemary, dill or even a dash of cumin – and for extra creaminess, blend in a tablespoon or two of tahini. For a deeper, slightly caramelised flavour, roast your garlic. Simply trim the top off a head of garlic, drizzle with oil and salt, wrap in foil and bake in the oven for 45 minutes at 200°C. Canned beans vs dried: how to make white bean dip tips

We use canned beans for convenience but you can also use dried beans to make this white bean recipe. For best results, soak them overnight, then rinse well and drain. Add to a large saucepan and cover with 5cm of water. Bring to the boil, scoop off any foam and add a little salt (not too much, as it will harden the skin). Cover and simmer gently for 1-1½ hours, until tender.

Place the dip in a serving bowl and use the back of a spoon to swirl a design. For garnishing, pine nuts give a satisfying crunch.
