Create a new family favourite with this Moroccan spiced beef served with roast pumpkin, cabbage and baby broccoli.

Ingredients

  • 1 mini drumhead green cabbage, cut into wedges
  • 500g pumpkin, chopped
  • 1 bunch red radish, trimmed, scrubbed, halved
  • 2 bunches baby broccoli, trimmed
  • 1 red onion, cut into wedges
  • 2 tbs extra virgin olive oil
  • 2 tbs Moroccan seasoning
  • 4 Coles Australian Beef Scotch Fillet Steaks
  • Greek-style yoghurt, to serve
  • Lemon wedges, to serve
  • Pita bread, to serve
  • Toasted flaked almonds, to serve

Method

  1. Step 1

    Preheat oven to 220°C. Line two large baking trays with baking paper. Divide cabbage, pumpkin, radish, baby broccoli and onion among trays. Drizzle with 1 tbs of the oil. Season. Bake for 20-25 mins or until vegetables are just tender. Set aside for 5 mins to cool.

  2. Step 2

    Meanwhile, combine the Moroccan seasoning and remaining oil in a medium bowl. Add beef and turn to coat. Heat a large frying pan over medium-high heat. Cook the beef for 3 mins each side or until cooked to your liking. Transfer to a plate. Cover with foil and set aside for 5 mins to rest.
  3. Step 3

    Divide the beef and roasted vegetables among serving plates. Top with yoghurt, lemon, pita bread and almonds.
